#22 — Proper Cold Holding TemperaturesPriority3-501.16

Inspector's notes

Observed cut tomatoes and container of yogurt with internal temperatures between 47°F - 48°F in "make" prep cooler. Ambient air temperature measured 48.5°F. Verified temperatures with person in charge (PIC). Per PIC a temperature check occurred about an hour prior and unit was below 41°F. PIC moved TCS food items to a properly working cooler at time of inspection. Discussed not using the "make" prep cooler for any TCS food items until unit has been serviced and maintains an ambient air temperature of 41°F or below. All TCS foods improperly cold held were relocated to alternative functioning refrigeration unit to rapidly cool to 41°F at time of inspection. Corrective Action: Corrected at time of inspection.
