Discussed with employee that anytime we change tasks or contamination to the hands occurs, such as working at a terminal, the hands must be washed prior to going back to working with food again. The employee removed their gloves, washed their hands and grabbed a new set of gloves. Discussed the importance of proper hand washing and when hand washing is required with the person-in-charge (PIC). Hands must be washed at any time contamination occurs and when changing tasks. Please provide a beveled edge around the floor sinks where recessed so the edges are easy to clean.2). Repair the wall at the bar where the CO2 line comers out of the wall.3). Provide cleanout cover at the bar, back wall.4). Provide a split escutcheon for the drain line of the front kitchen hand wash sink.5). Please install a task light at the soda station in he dining room.6). Please silicone the dish wash gutter to the wall where loose. See if you can apply a flush or beveled away from the wall bead of caulk at all sinks so water does not stand in a concave caulk joint.7). After cleaning silicone the mop sink at the floor and FRP junctures.8). Please provide a door sweep at he back door and adjust front so the doors are insect tight. If the front door needs a new sweep, please install.9). There are some holes in the FRP on the mop sink wall next to the water heater, please patch and caulk 10). Windows in the kitchen will be caulked at the junctures with the window frames / FRP.11). Caulk around the drain line of the main backflow hub drain where penetrating the wall, both sides and seal.12). The backflow valve upstream of the soda system will be tested and certified.13). In the restroom where the schluters stand loose from the floor, please fill in / silicone to the floor. Provide cleanable transition.14). Hood will be caulked at the back wall junctures after film is removed.15). Coved base will be installed along the toe kick of the server station.16). Tile / concrete floor transitions will be beveled out.17). Underside pas through counters will be caulked and sealed also center wall pass through window.18). First inspection for the Rock N Roll sushi. Walk through conducted and the following items were noted:1). At the bar, caulk the FRP at the Underside bar juncture.2). Finish out he chase lines at the bar, close gaps and finish out cleanable. 3). Please provide splash guards on the hand wash sink at the bar.4). Please provide a hand wash sink at the server station in the dining room. This was missed during plan review. Hand wash sinks have to be conveniently located and within 20-25 feet without a barrier.5). Where FRP is cut wide around the junction boxes and outlets please finish out.6). All sinks, plumbing fixtures will be mounted and caulked it. 7). Please install a separate water line with angle stop at the mop sink to provide water for possible chemical dispensers.8). Please provide a door sweep at he back door and adjust front so the doors are insect tight.9). Self closers will be installed on the restroom doors.10). Corner trims, wall caps etc. will be installed where missing, windows will be caulked at the juncture window frame/ FRP.11). Please finish the edges of the floors sinks out beveled so there are no hard to clean 90 degree angles.12). The backflow valve upstream of the soda system will be tested and certified.13). Restroom ceilings are required to be washable. Current tiles are porous.14). Hood will be caulked at the back wall junctures.15).
