No hand sink observed on the cookline where raw foods are handled. Establishment has one hand sink that services 3 prep areas. There is no hand sink in direct line of sight from the cook line which is more than 25 feet away. Per PIC, there was a hand sink behind the soda machine which was removed to make room for a cooler approximately 2 years ago. Advised PIC to restore a hand sink in this area prior to re-inspection on 7/3/2026. Corrective Action: Correct prior to re-inspection.

Observed raw marinating shrimp stored above RTE salad dressings in the walk in cooler. All raw animal proteins must be stored below ready-to-eat (RTE) foods and stored according to cooking temperature at all times to prevent cross contamination. PIC properly stored all raw animal proteins according to the final cooking temperature based on the cooking parameters in § 3-401.11 of the Food Code. Observed a covered pan of cooling potato squares in the walk in cooler with internal temperatures ranging from 70-76*F when measured with a probe thermometer. PIC stated the potatoes were placed into the cooler at 11am, over 2 hours prior. All TCS foods improperly cooled were discarded by PIC at time of inspection. Cooked TCS foods must be cooled from 135°F to 70°F within 2 hours, and from 70°F to 41°F within 4 hours for a total of 6 hours for cooling. Corrective Action: Corrected at time of inspection.

Explained to PIC that the AVB valve is not designed to be continuously under pressure and that there shouldn't be any obstructions downstream from the AVB valve. To complete the permitting process, issuance of this permit, and begin operation, the applicant must first submit payment of the annual operating permit fee to the Department’s Administrative Services. Fees paid up to this inspection approval do not include the annual operating permit fee. PAYMENT with a credit/debit card can be made via phone at 602-506-6824, Option 2.
