Inspector's notes

Observed temperature in walk-in cooler at 53*F. Observed milk in containers with visible spoilage. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. All TCS foods improperly cold held were discarded by PIC at time of inspection. PIC stated they will get walk-in cooler checked out. Corrective Action: Corrected at time of inspection.

Inspector's notes

Observed label on a bag of ice stored within the ice machine with labels that are missing the name of the facility the bags were made in, the address or phone number of the facility and list of ingredients. Discussed with Person in Charge (PIC) Labeling shall contain 1) Name of Product; 2) Processor Name; 3) Processor Address or Phone Number; 4) Ingredients; 5) Approximate Weight; 6) In English. Also discussed with PIC the bagged ice shall not be stored within the ice machine as cold holding unit and shall be stored with proper labels in a separate unit. PIC removed the bag of ice and will clean the machine before making more bags of ice. Corrective Action: Correct prior to next routine inspection.
