Inspector's notes

Observed bottles of plain milk in the walk-in cooler with an internal temperature of 51 degrees Fahrenheit. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Per person in charge (PIC), milk was delivered and placed in the unit on 7/3, more than 4 hours prior to the inspection. The ambient temperature of the walk-in cooler was measured at 52F with min-max thermometer. Establishment only stores a very small quantity of TCS foods (i.e. limited to these bottles of milk) in the unit and the unit is not critical to the establishment's overall cold-holding capacity at this time. The unit may not be used for TCS foods until repairs are completed. Of note: the milk was also past manufacturer's sell-by dates ranging from 6/6/26 to 6/18/26. PIC discarded the milk bottles voluntarily - see embargo form. Corrective Action: Corrected at time of inspection.
