Observed cream cheese frosting, Banna pudding made with milk and cheesecake cold holding at internal temperature of 49-52 deg F in a reach in cold unit that was holding >41 deg F. PIC informed the food items had been holding in unit since the night prior and removed from retail sale. The reach in unit returned to <41 deg F during inspection. This is the second consecutive violation Corrective Action: Corrected at time of inspection.

Observed raw shelled eggs on counter in food preparation area at internal temperature of 75 deg F. Cook placed eggs back in reach in unit. Observed cinnamon rolls with real cream cheese icing in bakery display case at internal temperature of 71 deg F. Manager placed in freezer for rapid cooling and Inspector assisted manager in preparing a time as a control procedure for cinnamon rolls. Corrective Action: Corrected at time of inspection.
