-- Observed case of unpasteurized eggs with received date of 10/28 in walk-in refrigerator. Scrambled eggs observed on menu. Reviewed MCESD requirements with PIC: Highly susceptible population cannot be served un-pasteurized juices; pasteurized eggs and egg products are to be substituted for certain raw egg ingredients; no RTE raw animal foods or foods containing raw or partially cooked animal foods or raw seed sprouts. Per PIC, the unpasteurized eggs are for personal use. Discussed with the PIC designating/labeling items for personal use in the walk-in refrigerator. At the time of inspection, the PIC stated they will label "staff/personal items" for eggs. Corrective Action: Corrected at time of inspection.

The PIC stated the unpasteurized hard-shelled eggs are only used for baking and hard-boiling. The PIC stated unpasteurized are expected to be delivered 11/26/2024. Reviewed food storage hierarchy. Discussed waterproof dishwasher thermometer or stickers for high temperature dishwasher.
