Per manager, product had been out for approximately one hour, and was voluntarily discarded for quality at time of inspection, and new product placed on line. Reviewed hot holding and monitoring of TCS foods - ensure all TCS is kept at 135*F or above. Corrective Action: Corrected at time of inspection.

Observed containers of shredded lettuce and cheese holding in top portion of reach-in cooler at 47*F. No other product observed in cooler. Per manager, items had been placed in cooler approximately one hour prior, and was moved to walk-in cooler at time of inspection to bring down to 41*F before using. Ensure all TCS foods are kept at 41*F or below - reviewing cold holding best practices. Corrective Action: Corrected at time of inspection.
