Observed tomato slicer and table-mounted can opener stored as clean with dried food debris on the food-contact surfaces at time of inspection. DIscussed cleaning frequency with PIC. All food-contact surfaces must be cleaned to sight and touch. PIC relocated all food-contact surfaces to warewashing area to be washed, rinsed, and sanitized at the time of inspection. Corrective Action: Corrected at time of inspection.

Inspector's notes
Observed 3 floor drains at the hot food prep area full of sewage at time of inspection, and not capable of conveying sewage. PIC stated floor drains sometimes fill up when other sink basins are emptied during shift change. Discussed the importance of being able to properly convey sewage at all drains throughout establishment. On-site maintenance was able to snake the areas in question to restore functionality at the floor drains at time of inspection. Corrective Action: Corrected at time of inspection.
