Inspector's notes
Observed in the pizza station to have melted cheese and sauce all over the top part of the prep table. Also observed the pizza dough mixer to have dried dough on the equipment and on the ground from the previous shift of the ghost kitchen. The pizza dough mixer was partially blocking a hand sink and was covered with a black garbage bag. Discussed with person in charge (PIC) all food-contact surfaces must be cleaned to sight and touch. Also discussed that black garbage bags are not to be used on food equipment as deleterious materials may migrate. Replace with food safe bags or food safe plastic wrap. PIC started to clean the equipment and prep table at time of inspection. Also discussed hand wash sinks shall be maintained as accessible at all times. PIC relocated the mixer at the time of inspection. Corrective Action: Corrected at time of inspection.
