Inspector's notes

Observed cooked beans in the walk in cooler having an internal temperature of 55*F. Person in charge states they left the beans out in ambient temperature for an hour during their rush but placed the beans back in the cooler around 30 mins prior to the inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Please do not leave TCS foods at ambient temperature for too long as this leads to the food being in the danger zone (42-134*F) which can lead to bacterial growth. Corrective Action: Corrected at time of inspection.

Observed the ice scoop being stored in the ice machine with its handle in contact with the ice. In-use utensils must be stored in a clean, dry location; in running water; or in hot water above 135°F. If utensils are stored in food, the handles must be stored above the surface of the food. All in-use utensils were properly stored at time of inspection. Corrective Action: Corrected at time of inspection.

Observed the handwashing sink located next to the hood system leaking water when the handles are turned off. Also observed a build up of ice in the freezer.
