Inspector's notes

Observed a large deep pot of cooked birria inside the walk-in with an internal temperature of 69-71'F at time of inspection. Per PIC, the birria was cooked the day before around 6pm, more than 18 hours prior to inspection. Discussed proper cooling parameters with PIC. Cooked TCS foods must be cooled from 135°F to 70°F within 2 hours, and from 70°F to 41°F within 4 hours for a total of 6 hours for cooling. Instructed PIC to cool smaller portions of birria in metal pans less than 4 inches in depth, ice wands, or other effective means of cooling. All TCS foods improperly cooled were discarded by PIC at time of inspection. Corrective Action: Corrected at time of inspection.

Person in charge states these foods were made/prepped/opened 3-4 days prior to the inspection. RTE/TCS foods requiring date marking must be date marked within 24 hours and sold or discarded after 7 days (including the day it was made as day 1). Observed an employee cook off some beef and pork, cover these food items, and place them in a reach in prep cooler to cool down. TCS foods must be cooled in: uncovered/loosely covered, shallow containers less than 4 inches deep, in equipment designed to rapidly cool, by using an ice bath, by using ice as an ingredient, or another effective means. All TCS foods cooling were uncovered and placed in the walk in cooler to allow for rapid cooling. Corrective Action: Corrected at time of inspection.
