Observed water chestnuts 45*F, cooked shrimp 44*F, liquid egg 47*F, previously frozen peas/ carrots 49*F, cut cabbage 44*F in the prep table at the time of inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Per employee, prep table temperatures were verified two hours prior to the time of inspection. Instructed PIC to relocate TCS foods improperly cold held to alternative functioning refrigeration unit to rapidly cool to 41°F at time of inspection. Corrective Action: Corrected at time of inspection.

The cooked shrimp was transferred to an ice bath and the garlic and oil mixture was moved to the walk in cooler at time of inspection. Prep refrigerators are not designed to cool TCS foods. Discontinue cooling TCS foods at room temperature. Provided cooling methods guidance document electronically. Provided a paper copy of the cooling: acute guide. Corrective Action: Corrected at time of inspection.
