Inspector's notes

Observed raw in shell eggs (54°F), shredded cheese (55°F), sliced cheese (54°F), mac and cheese balls (55°F), cooked beans (54°F), flan (54°F) open containers of mayo (54°F), and Cream-based sauces (54°F) stored inside walk in cooler. All TCS foods which had been in the unit overnight were embargoed (see embargo list). All TCS foods improperly cold held were discarded by PIC at time of inspection. Discussed the importance of routinely checking cold-holding foods. PIC stated that someone will come tomorrow morning to fix the walk in cooler. Corrective Action: Corrected at time of inspection.

Observed walk in cooler measured at 55.6°F with the min/max thermometer. Walk in cooler is connected to walk in freezer. PIC propped opened freezer door to cool down walk in to 41°F and below at time of inspection. Cold holding equipment must have the capacity to maintain TCS foods at 41°F or below. Must repair cold holding equipment such that it maintains TCS foods at 41°F or below. Corrective Action: Correct within 24 hours.
