Predefined Comment: No County legal action will result from this inspection.Discussed with person in charge that a ventilation hood is required if establishment uses equipment that produces grease or smoke. Discussed with PIC that handwash sinks shall be strictly uses only for handwashing. Reviewed sanitizer bucket usage, and requirement that all employee food/beverages shall be stored in a way to prevent contamination and separated from food used for bakery.

Inspector's notes

Observed establishment to have quat sanitizer and chlorine bleach with no test strips available. PIC stated that quat sanitizer is used for dishes and the chlorine bleach used for the floors. Test strips are required for any sanitizers used with food contact surfaces. Provided sanitizer test strips at time of inspection. Corrective Action: Corrected at time of inspection. 4-301.13 - Core: Drainboards Addl Notes: Observed establishment drying dishes in last compartment of 3-comp sink. Explained use of 3-comp sink and proper dish drying. Establishment shall air dry dishes on racks after sanitizing. Corrective Action: Correct prior to next routine inspection.
