-- In walk-in refrigerator, multiple tightly plastic wrapped containers of sliced Roma tomatoes prepped at 9:33 AM had internal temperatures between 44°F-47°F using probing thermometer. All TCS foods improperly cooled were discarded by PIC at time of inspection. Discussed with PIC ensuring employees are allowing TCS foods to vent and cool significantly before sealing it. TCS foods prepared from cold or ambient room temperature ingredients must be cooled from 70°F to 41°F within 4 hours. Corrective Action: Corrected at time of inspection.
