Establishment is reduced oxygen packaging raw meat without an approved variance. Establishment has applied for a variance, but has not paid, reviewed, and been approved for process. Instructed employee to open all reduced oxygen packaged raw meats at time of inspection. Discontinue process until approved by Maricopa County. A variance/HACCP must be obtained prior to conducting any specialized processes.
