Observed cooked carne asada with a temperature of 120°F stored in a metal pan and sitting on counter next to hot-holding unit. Per PIC meat had been cooked on the griddle around 11am that morning. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 135°F or above. PIC reheated cooked carne asada to 165°F on griddle and placed into hot-holding unit for proper temperature control. Corrective Action: Corrected at time of inspection.

Observed cut, raw tomatoes in cold holding unit nearest to service window reading 45*F. Per PIC, the lid is often open which is why they are out of temperature. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. All TCS foods improperly cold held were relocated to alternative functioning refrigeration unit to rapidly cool to 41°F at time of inspection. Corrective Action: Corrected at time of inspection.

The shrimp was sitting atop the ice in a container stored inside the bottom half of the make-line unit. The shrimp was submerged in ice and the make-line unit had an ambient temperature of 38*F**
