Observed containers of ranch dressing date marked 11/03, it is now 11/25. Also observed sliced cheese and cooked steak in containers with no date marked. Person in charge was unsure of how long the food items had been in the refrigeration unit. A food shall be discarded if: o It exceeds the 7 days at 41ᵒF, except time it is frozen o It is in a container or package that does not bear a date/day and has been held for > 24 hours and facility has no date marking system in place. Observed opened, prepped containers on burger spread sauce, tarter sauce, cut tomatoes, and garlic in oil stored in walk-in refrigeration unit located in the Southwestern region of the facility with temperatures ranging from 34*F to 40*F with dates labeled 3/27, 8/6, 7/2. Person in charge stated these were the dates the items and been prepped. Also observed containers of cooked macaroni and cooked steak stored in walk-in refrigeration unit located in the Northern section of the facility without date markings. It is unknown how long food items had been in refrigeration unit. A food shall be discarded if: o It exceeds the 7 days at 41ᵒF, except time it is frozen o It is in a container or package that does not bear a date/day and has been held for > 24 hours and facility has no datemarking system in place. Observed 2 overhead light fixtures located in women's restroom with insufficient light intensity. The light intensity shall be at least 108 lux (10 foot candles) at a distance of 75 cm (30 inches) above the floor, in walk-in refrigeration units and dry food storage areas and in other areas and rooms during periods of cleaning; • At least 215 lux (20 foot candles): o At a surface where food is provided for consumer self-service such as buffets and salad bars or where fresh produce or packaged foods are sold or offered for consumption, o Inside equipment such as reach-in and under-counter refrigerators; and o At a distance of 75 cm (30 inches) above the floor in areas used for handwashing, warewashing, and equipment and utensil storage, and in toilet rooms; and • At least 540 lux (50 foot candles) at a surface where a food employee is working with food or working with utensils or equipment such as knives, slicers, grinders, or saws where employee safety is a factor. Observed open container of cooked macaroni and cheese balls in walk-in refrigeration unit in Southwest corner of commissary measuring 40*F with the date marked 3/28. Also observed open container of sliced tomatoes dated 4/19 measuring 40*F and an open container of garlic in oil with the date marked 3/19 measuring 40*F in walk-in refrigeration unit. When asked what the date on the container was, the employee stated it was the day the items were prepped and placed into the walk-in. The current date is 5/1. TCS food to be clearly marked to indicate the date or day the food shall be consumed on premises, sold, or discarded when held at a temperature of 41°F or less for a maximum of 7 days.
