Observed boiled pork belly in refrigerator in shallow container holding at 58°F, and large bucket of cooked rice in other refrigerator holding at 70°F degrees. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. PIC said that both items were place in refrigerator shortly after cooking roughly 2.5-3 hours prior, and were still technically cooling. PIC was instructed to immediately reheat both items to 165°F at time of inspection and maintain them hot rather than continue cold holding. Corrective Action: Corrected at time of inspection.

Observed reach in refrigerator in unit closest to 3-compartment sink holding at 60°F at time of inspection. All food inside cooler was either still frozen or non-TCS. All frozen TCS foods were moved to an alternate refrigerator at time of inspection. Cold holding equipment must have the capacity to maintain TCS foods at 41°F or below. Must repair cold holding equipment such that it maintains TCS foods at 41°F or below. Corrective Action: Correct prior to re-inspection.

Observed cooked rice and boiled pork belly on unit holding at 70°F and 58°F, respectively. PIC confirmed both items were prepared roughly 2.3-3hrs prior and shortly after cooking were placed in reach in refrigerators on unit to cool. Per MCEHC, food preparation shall be simplified to reduce excessive steps where food may become contaminated. Excessive steps may include, but are not limited to, cooking overnight without oversight, cooling, or cutting large volumes of food items. PIC was instructed to immediately reheat rice and pork belly and instructed to perform all cooling at commissary prior to placing food in the mobile unit. Employee added more ice to noodle containers to rapidly cool back down to the proper temperatures. Repair any leaks in the plumbing and demonstrate that the water system can function without leaks. 2.) Repair or seal all holes/ open gaps in the flooring. 3.) Replace all flex line tubing and clear tubing with PVC for wastewater lines. 4.) Service window opens to 390 square inches. Minimize opening to 324 square inches or less.
