Toxic substances shall be used according to the manufacture's labeling. Chlorine bleach shall measure between 50 to 100ppm. Corrective Action: Corrected at time of inspection.

Please also provide how the beef leg and belly will be purchased, whether that be pre-washed or washed at an approved commissary.*Discussed no carry over of TCS (time/temperature for safety) foods is allowed on the mobile unit.*Discussed that cooling shall not take place on the mobile food unit. All cooling takes place in advance at a permitted food establishment/commissary. *Discussed food process must be simplified to reduce excessive steps, contamination prevented, and produce/ animal proteins must be purchased commercially pre-washed or washed in advanced at a permitted establishment/commissary.Approved to sell or giveaway produce, nuts, and pre-packaged, individually wrapped, properly labeled food items from approved source only. Frozen foods must be maintained frozen and sold to the consumer frozen.All food preparation and including grilling, barbecuing, cooking, displaying, serving, and storage must be done inside the Mobile Food Type III unit.Mobile Food Type II and III units shall operate from a commissary or other fixed food service establishment and shall report at least daily to such location for all supplies and for cleaning and service operations.Mobile Food Type I-III establishments shall at all times remain vehicle mounted and readily movable.
