A pan of cheese at 56*F was holding cold in the refrigerator. Per person in charge, the cheese was placed in the refrigerator approximately 20 minutes earlier. The person in charge placed the cheese in the in a cooler submerged in ice to return to proper cold holding temperature. Ensure all time temperature controlled for safety foods are held cold at 41*F or bellow. Corrective Action: Corrected at time of inspection.
