Inspector's notes

Observed a pan of rice in the prep table at 60*F. PIC informed that the rice had been cooked 3 hours prior and cooled at the commissary kitchen before being placed in the mobile unit. Informed PIC that cooling must be completed at the commissary kitchen and not on the mobile unit. Instructed PIC to separate the rice into smaller containers and place them in the bottom of the prep table to finish cooling. PIC separated the rice into smaller containers to cool at time of inspection. Provided cooling parameters and methods guidance documents via email. TCS foods must be cooled in: uncovered/loosely covered, shallow containers less than 4 inches deep, in equipment designed to rapidly cool, by using an ice bath, by using ice as an ingredient, or another effective means. All TCS foods being cooled in deep containers were transferred to shallow containers to allow for rapid cooling. Corrective Action: Corrected at time of inspection.

Observed ice packs and ice pack sheets labeled "non-toxic. do not eat" stored directly on top of rice in the top of the prep table. Informed PIC that the ice packs are made out of material that is not food grade and should not be touching food. Informed PIC that food grade materials are the only materials allowed to touch food. Informed PIC that the ice packs are filled with chemicals and labeled "do no eat" and they may not be stored above food or food contact surfaces. Instructed PIC to remove the cold packs from the prep table and to use ice in a food grade bag instead. PIC removed the ice packs from the unit at time of inspection. Corrective Action: Corrected at time of inspection.

MCEHC Chap. 8, Sec. 3, Reg. 5e - Mobile food establishments serving time/temperature control for safety foods shall maintain a log of visits to the approved commissary or food service establishment as required by this Department. This log shall be maintained using a Department approved format and maintained with the establishment at all times. The logs shall be maintained for a period of 30 days and should be available for review by the Department.
