Inspector's notes
Observed shredded chicken, raw pork, and raw sausage in a cooler with no ice, temping at 75 degrees. Per PIC, food was brought on site less than 2 hours prior to inspection. Informed PIC that, except during preparation, cooking, cooling, or when time is used as a control, all TCS foods must be maintained at 41°F or below. Raw pork and raw sausage were voluntarily destroyed by PIC. Shredded chicken was reheated to 165°F and ice was added to coolers at the time of inspection. Corrective Action: Corrected at time of inspection.

Inspector's notes
Observed the mobile unit cooking al pastor trompo, sausage, and other uncooked pork from raw on-site. Informed the PIC that Type 2 mobile food units are not permitted to cook raw animal proteins. All animal proteins must be fully cooked prior to being brought onto the unit. PIC voluntarily destroyed raw sausage and raw pork products. PIC agreed to cook all meat at commissary going forward. Corrective action: corrected on cite. MCEHC Chap. 8, Sec. 3, Reg. 5e - Mobile food establishments serving time/temperature control for safety foods shall maintain a log of visits to the approved commissary or food service establishment as required by this Department. This log shall be maintained using a Department approved format and maintained with the establishment at all times. The logs shall be maintained for a period of 30 days and should be available for review by the Department. Addl Notes: Observed no commissary logs at time of inspection. Per PIC they visit the commisary daily but they do not have logs. Informed PIC that 30 days of commissary logs are required to be available for inspectors at time of inspection. Corrective Action: Correct prior to next routine inspection.
