This log shall be maintained using a Department approved format and maintained with the establishment at all times. #22 — Proper Cold Holding TemperaturesPriority3-501.16

Inspector's notes

Observed Shredded cheese (70°F), yoghurt based dips (68°F), cut tomatoes (71°F), cut cabbage (74°F), and fresh hummus (66°F), all in refrigerated prep table holding at 50°F. All items except for shredded cheese had been cut or prepared within the past hour, and all food had been purchased and placed on the unit within the past 3 hours. Refrigerators were off during transport and had been turned on roughly 30-45 minutes prior, and were still cooling to holding temperature. All improperly cold-held food was moved into a properly holding freezer until at proper temperatures, then placed back in refrigerator once the refrigerator finished cooling. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. All TCS foods improperly cold held were relocated to alternative functioning refrigeration unit to rapidly cool to 41°F at time of inspection. Corrective Action: Corrected at time of inspection.
