Observed cooked cabbage and cooked chili sauce held on time as control with no time stamps at time of inspection. Per chef, both items were made at 1 p.m. & 2 p.m. Discussed with PIC and chef about proper time as control procedures at time of inspection. All TCS foods being held under time as a control were properly time stamped at time of inspection. Observed cardboard soiled with food particles stored under the grill near the fryers of the establishment in the back of house. Observed trash bag taped below hot holding unit and napkins taped on shelves holding food containers at time of inspection. Discussed with person in charge (PIC) about removing cardboard, trash bag, and napkins throughout establishment at time of inspection. Any nonfood-contact surfaces of equipment that are exposed to splash, spillage, or other food soiling or that require frequent cleaning shall be constructed of a corrosion resistant, nonabsorbent, and smooth material. Observed cooked shrimp cold holding in the reach in cold unit on preparation line at internal temperature of 72 deg F and bacon cold holding at internal temperature of 49 deg F on bottom portion of reach in unit. The unit was holding within specification. Manager placed food items in freezer for rapid cooling. Observe cut cabbage cold holding in plastic containers with lid on container at internal temperature of 58 deg F in another reach in unit. Manager informed the cabbage was prepared earlier in day and placed in reach in freezer. Corrective Action: Corrected at time of inspection.

Observed cooked cabbage hot holding at internal temperature of 109 deg F in a metal pan in the food preparation area and observed a plastic container containing onion soup hot holding at internal temperature of 130 deg F also in food preparation area. Manager informed the food items were in preparation area and was able to recall time food was placed out of temperature control. Chinese liaison assisted manager in preparation of time as a control procedure. Correct By: Corrected At Time Of Inspection
