Observed no food manager certificate to verify that the person in charge is a certified food manager. Per the person in charge, they are certified food manage but could not locate their certificate at time of the inspection. Discussed having the certificate available at all times when operating and a Certified Food Protection Manager (CFPM) is required to be on the premises during all hours of operation. Corrective Action: Correct prior to next routine inspection.

Inspector's notes

Observed staff wearing a clean glove to prepared ready to eat food and did not wash hands after taking utensils from the hand sink. Discussed the importance of proper hand washing and when hand washing is required with the person-in-charge (PIC). Hands must be washed at any time contamination occurs and when changing tasks. Staff corrected by washing hands at time of the inspection. Corrective Action: Corrected at time of inspection.

Observed a large pan of rice sitting on top of the hand-washing sink, and several utensils sitting inside the sink. Discussed with the person in charge that the facility must be maintained in a condition that promotes handwashing. All items were removed from the sink. Corrective Action: Corrected at time of inspection.

Inspector's notes

Observed a large pan of cooked rice sitting on top of the handwashing sink with internal temperature at 131 degrees F. Per the operator, the rice was cooked 30 minutes prior to the inspection, and they were keeping it at the same temperature for serving. Discussed with operator that except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 135°F or above. The operator corrected by using Time as Control and will keep time records for the Sushi rice. Corrective Action: Corrected at time of inspection.
