Observed TCS foods in stand up fridge with internal temperatures above 41°F. PIC stated food items were removed from refrigeration at commissary at 11:30am and no cold holding methods used during transportation to event. Refrigeration unit observed to have an ambient temperature of 48 - 51.4°F. Foods temped at 5pm include raw chicken (51-54°F), raw pork chops (54°F), raw fish (54°F), cooked collared greens (57°F), cooked yams (60°F), mac and cheese (54°F), cooked beans (54°F), rice (58°F), meatloaf (52°F), nacho cheese (56°F). All TCS foods improperly cold held were discarded by PIC at time of inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Corrective Action: Corrected at time of inspection.

MF unit has no other means of refrigeration, only frozen foods will be served until refrigeration unit is repaired. Cold holding equipment must have the capacity to maintain TCS foods at 41°F or below. Must repair cold holding equipment such that it maintains TCS foods at 41°F or below. Corrective Action: Correct prior to re-inspection. 3 day re-inspection required.

Observed cooked yams with an internal temperature of 91*F and cooked collard greens with an internal temperature of 135*F located at the steam table. Per person in charge the items were placed on the steam table 15 minutes prior to inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 135°F or above. Person in charge reheated both items to 165*F for 15 seconds before returning the items to the steam table to maintain temperature at 135*F or higher. Corrective Action: Corrected at time of inspection.
