Observed an employee drop a clean pan on floor, then dip pan in each section of three-compartment sink for about two-five seconds each, then set to air dry. Establishment uses a quaternary ammonium sanitizer which requires a contact time of at least thirty seconds. Employee placed dish and any dishes contacted by dropped dish in three-compartment sink to be washed, rinsed and sanitized properly at time of inspection. Corrective Action: Corrected at time of inspection.
