Observed a buildup of black organic matter in the back of the ice machine in room behind prep line. Discussed cleaning frequencies and deep cleaning the ice machine. Physical facility must be cleaned frequently enough to prevent accumulation of dirt, organic matter, and food debris. Must clean physical facility prior to next routine inspection.
