Predefined Comment: To ensure food safety, prevent physical contamination and the transmission of disease; employee eating, drinking, beverage storage, and using tobacco must be done in an approved area.

Inspector's notes

Observed shredded cheddar cheese with an internal temperature of 68*F on storage rack being held at room temperature. Shredded cheese was left unattended and did not have employees actively using it. Discussed importance of only pulling product that will be used to prevent temperature abuse on TCS foods of entire storage cart. According to PIC, cheese was left out for 30 minutes prior to inspection and were moved to walk-in cooler to rapidly chill.

The fryer and hood have been removed, and plans include adding an oven and proofer in its place. Discussed remodel application requirements with the Person in charge. Predefined Comment: Upon inspection, a remodel has taken place which may require an application and plans to be submitted, and/or additional permits. Please submit an application, supporting documentation, and fees within 5 business days or legal action may result pursuant to MCEHC Chapter 1, Regulation 4(e). Applications with supporting documentation can be submitted via the customer portal "Permit Center" online at maricopacountyaz-energovweb.tylerhost.net/apps/selfservice#/home.
