#22 — Proper Cold Holding TemperaturesPriority3-501.16

Inspector's notes

Observed TCS/RTE food items (prepackaged ham and Swiss croissants and egg bites) at a temperature of 50'F in the standing fridge located in the dry storage area of the establishment. All other non-TCS food items located in the fridge were at 41'F or above at the time of inspection. The ambient minimum air temperature was measured to be 52.3'F at the time of inspection. Per PIC, all items were placed in the refrigerators more than 4 hours prior to inspection. All items were embargoed at the time of inspection. PIC will use other cold holding refrigerators to hold TCS foods until repairs can be made such that the refrigerator maintains TCS foods at 41'F or below at all times. Discussed proper cold holding with the PIC. Discussed proper food storage to allow for adequate air flow in cold holding units. All TCS foods held cold must be held at 41'F or below at all times. Corrective Action: Corrected at time of inspection.
