Observed refrigerated kiosk at front of store with an ambient temperature of 49°F. Foods inside of the kiosk were placed in there the day prior. TCS foods noted on embargo form. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. All TCS foods improperly cold held were discarded by PIC at time of inspection. Corrective Action: Corrected at time of inspection.

Observed prepackaged TCS food items between 48*F-51*F in cold holding unit on retail floor. Deli sandwich 51*F, hardboiled eggs with no shell 48*F, meat and cheese packs 50-51*F, bean burritos with cheese 48*F, peeled grapefruit with refrigeration required on packaging 50*F, rice pudding with milk 49*F, hummus packs 51*F. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. PIC did not take temperatures the day of inspection and the food items had been in the cold holding unit since the previous day. All TCS foods improperly cold held were discarded by PIC at time of inspection. Corrective Action: Corrected at time of inspection.
