Inspector's notes

Observed 2 rib sandwiches in reach in cooler in front of cashier area with a temperature of 45*F-47*F. Per person in charge (PIC), the sandwiches had been in the cooler since the night prior. All TCS foods improperly cold held were discarded by PIC at time of inspection. Advised PIC to keep RTE sandwiches farther in the cooler to ensure proper cold holding. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Corrective Action: Corrected at time of inspection. All bulk milk container dispensing tubes shall be cut on the diagonal leaving no more than one inch protruding from the chilled dispensing head. Corrective Action: Correct prior to next routine inspection.
