Predefined Comment: Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. PIC unable to determine how long TCS foods were stored above 41°F at time of inspection. Predefined Comment: All TCS foods improperly cold held were discarded by PIC at time of inspection. According to the PIC a work order has already been submitted for repair. Discontinue storage of TCS foods in malfunctioning refrigerator until it maintains TCS foods at 41°F or below. Corrective Action: Corrected at time of inspection.
