Observed pureed broccoli and ground beef in hot holding unit with an internal temperature of 118-130*F. Cook stated foods were prepared and cooled on the counter for less than 30 minutes before placing in the hot holding unit without checking temperature. Person in charge had cook reheat foods to 165*F before placing back in hot holding unit. PRIORITY VIOLATION-3-501.16(A)(1) - Priority: Time/Temperature Control for Safety Food, Hot Holding. Observed refried beans and raviolis, tightly packed in 4-inch metal containers, in walk-in refrigerator with an internal temperature of 70*F. Person in charge stated foods were placed in unit 4 hours prior to inspection. Person in charge removed plastic wrap and instructed staff to place foods on ice bath for quick cooling. Inspector's notes

Observed multiple containers of leftovers from lunch being cooled inside walk-in cooler while tightly sealed with saran wrap. Rice, chicken tenders, pork had internal temperature ranges of 103-125*F. Per PIC, the containers were placed in walk-in less that 30minutes prior to inspection. PIC vented all containers and portioned the rice into half pans to facilitate rapid cooling. Prodcuts were later observed with an internal temperature range of 87-95*F and dropping. TCS foods must be cooled in uncovered/loosely covered, shallow containers less than 4 inches deep, in equipment designed to rapidly cool, by using an ice bath, by using ice as an ingredient, or another effective means. Corrective Action: Corrected at time of inspection.
