Observed quat (+500 PPM) dispensing from the automatic sanitizing dispenser on the three-compartment sink above the recommended use range (150-400 PPM). Alerted store manager who placed a work order into their third-party servicer to have the automatic dispenser adjusted. Staff will dilute the quat solution with water to the appropriate range until the automatic sanitizing dispenser can be serviced. Discussed routine checking of the sanitizer concentration with staff. Corrective Action: Corrected at time of inspection.

Observed the high-temperature dish machine only able to reach 148.4°F with the min/max thermometer after multiple run-cycles. The log had not been filled out for several months. The grocery manager placed a work order for the high-temperature dish machine at time of inspection. Staff to wash and rinse only with the high-temperature dish machine until it is serviced and able to reach sanitizing temperatures (at or above 160°F). Until the high-temperature dishwasher is fixed, dishes MUST be sanitized with the quat at the three-compartment sink before being considered clean. Corrective Action: Corrected at time of inspection.
