Inspector's notes
Observed a meat case with some food in it that was displaying an ambient air temperature of 60°F on the unit. A min-max thermometer was placed into the unit and allowed to stabilize for 15 minutes. After 15 minutes, the air temperature inside of the case was holding at 57°F. The internal temperature of some ground beef chubs was measured using a probe thermometer and the internal temperature of the ground beef was 50°F. According to the time that the case was stocked with food, the food had been in the case and had been out of temperature for more than 4 hours. The foods in the case were embargoed at time of inspection (see embargo form). Person in charge will reach out to a technician to service the unit. In the meantime, the establishment will not keep any TCS foods in the case until it is repaired. The establishment has sufficient cold holding capacity to operate safely. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Corrective Action: Corrected at time of inspection.
