-- Observed employee spray off dirty dishes with gloved hands, then start to put away clean dishes without washing hands and changing their gloves between tasks. Discussed the importance of proper hand washing and when hand washing is required with the person-in-charge (PIC). Hands must be washed at any time contamination occurs and when changing tasks. Another employee assisted putting away clean dishes with clean hands. The clean dishes that came in contact with dirty hands were relocated back to warewashing area to be washed, rinsed, and sanitized at the time of inspection. Corrective Action: Corrected at time of inspection.

-- In lower reach-in drawer, observed cooked ravioli, gluten free rotini, and cooked shelled pasta with internal temperatures ranging from 45°F-52°F using probing thermometer. All other TCS items in unit cold holding at 41°F or below. The PIC stated the items were removed from the main walk-in unit and placed in drawer approximately 1 hour prior to the inspection. All TCS foods improperly cold held were relocated to alternative functioning refrigeration unit (walk-in refrigerator) to rapidly cool to 41°F at time of inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Corrective Action: Corrected at time of inspection.

Observed high temp dish washer surface temperature to range from 140*F-157*F. Person in charge stated that dishwasher was working properly earlier in the day. When food-contact surfaces are being sanitized with hot water in a dish machine, the surface temperature must reach at least 160°F as measured by an irreversible registering temperature measuring device to destroy pathogens that may remain on such surfaces after cleaning. Food-contact surfaces were properly sanitized at time of inspection. Three comp sink was set up and will be used until dish machine is working properly. Corrective Action: Corrected at time of inspection.

Pasta sauce cooling in ice bath found with internal temperature (bag folded around probe thermometer) of 78-80*F. The bag had a cooling start time of 11:15 AM and temperature was taken around 2:15 PM. PIC discarded the sauce. PIC also checked the other bags and found 1 other bag was still above 70*F and discarded it. The temperature of the bags was recorded in the cooling logs as reaching 58*F at the 2 hour mark. Discussed cooling methods and use of cooling log with PIC. Please ensure cooling TCS food items meeting required minimum cooling temperatures and time frames (135*F-70*F within first two hours or must be discarded. Reheat option is available if discovered prior to the 2 hour mark and you want to reset the cooling process). Corrective Action: Corrected at time of inspection.

PIC was unsure of when the cooler and products were last found to be at 41*F or below. PIC discarded the chicken and tomatoes (see embargo form). The embargoed products were closest to the door and also higher on the storage racks. Other food items stored on lower or further back shelves were found to be at 41*F or below. Discussed rearrangement of the walk-in to have TCS food items further back away from the door where temperatures are warmer. Please ensure cold held TCS food items are maintained at 41*F or below.
