Observed a knife stored between a prep table and the wall behind the table. Discussed with person in charge to store in-use utensils in a clean, dry location. In-use utensils must be stored in a clean, dry location; in running water; or in hot water above 135°F. If utensils are stored in food, the handles must be stored above the surface of the food. All in-use utensils were properly stored at time of inspection. Corrective Action: Corrected at time of inspection.

Observed some dishes stored at the clean dishes storage rack. Upon separating the dishes, water was trapped between some nested pans. Discussed with person in charge to air-dry the dishes prior to nesting them together. The person in charge separated the wet dishes so they could finish air-drying. All equipment and food contact surfaces must be air-dried after properly cleaning and sanitizing. Corrective Action: Corrected at time of inspection.

Person in charge placed the tubs of ice cream on nearby racks. Food must be stored at least 6 inches off the ground at all times to prevent contamination from the premises. Corrective Action: Corrected at time of inspection.

Observed a closed bucket of cooked corn inside the walk-in fridge. Using probe thermometer the temperature of corn and was found at 70-75° F from the top and higher the deeper it went. Discussed with PIC about corn and it was made about two hours ago. Discussed with PIC about using shallow pans to cool corn using the proper cooling methods. PIC removed corn from bucket into shallower pan and placed it in walk in. Correct By: Corrected At Time Of Inspection
