Inspector's notes
Observed no min-max thermometer or temperature sanitizing stickers or test strips for the hot water sanitizing dish machine in the bakery. Inspector utilized their min-max thermometer to verify that the machine is at the appropriate hot water sanitizing temperature and the min-max thermometer recorded a max temperature of 170° F for the machine. Sanitizing using high temperature warewashing machines requires an irreversible measuring device to ensure food contact surfaces reach 160°F. Provide approved irreversible measuring device prior to re-inspection. A reinspection will occur in 10 days or no later than July 17th, 2024. Corrective Action: Correct prior to re-inspection.
