Observed fried chicken in a pan, hot holding below 135°F, under the heat bulbs on the warming shelf. The chicken (125°FF) had been placed on the warming shelf within the last hour. The manager discarded the chicken at time of inspection. The warming shelf is set up for cook-to-order customer plates to briefly sit before being served to guest. Currently the warming shelf is not hot enough for longer periods of hot holding. Cook stated the pan was unintentionally placed there for hot holding. Establishment uses time control for the cooked pastas on the grill area No time indicator was on the container of pasta and no time log was present, at time of inspection. The cook stated the cooked pasta had been placed at room temperature three hours prior and placed the time indicator on the container. Discussed time control parameters with management. Establishment to use time indicators and have their time control policy available. Highly recommended time control policy be posted near were Time Temperature Control for Safety (TCS) foods are placed on time control. Provided additional time control guidance via email. Core-3-307.11, C: Miscellaneous Sources of Contamination Observed three paper bags of flour stored directly next to (and lower from) an employee handwashing sink. Two small water drops were observed on the brown paper bag of flour closest to the handwashing sink. The Person in Charge (PIC) covered the flour with a plastic cover at time of inspection. PIC plans to find a more permanent storage solution. Closed non-absorbent containers of food may be stored near handwashing sink and/or a splash guard may be added to the sink to reduce the likelihood that water will contaminate food stored nearby.
