At time of visit prep cooler that needs repair is not being utilized. Repair order is still open but repairs have not been made. Per manager she will send email when refrigeration unit is repaired and will have reinspection conducted prior to filling with potentially hazardous food.

Upon reinspection violations have not been corrected. No county legal action will result from this inspection. Emailed reinspection report. Employee stated that he had taken three portions of cold crab salad mix home and prepared them from home before bring them back to the store the night prior to reinspection. Items were discarded at time of inspection for improper cold holding conditions. Any food prepared outside of the permitted establishment, including employee homes, cannot be brought back to the establishment or served to customers in any form. Ensure that all food that is delivered to establishment remains at establishment at all times and all preparation is done at establishment in the designated prep areas. A pattern of non-compliance is developing for Priority violation # [ 20], Priority Violation - 3-501.16(A)(2) and (B), P: Time/Temperature Control for Safety Food, Cold Holding], which has been noted during this inspection. An Active Managerial Control Intervention Visit was offered to the person in charge. Failure to correct repeat violations may result in legal action. Observed various sushi (56-58°F) in the top of the prep table cold holding above 41°F. The sushi chef stated that all the sushi had been made at 10 am (2 hours prior to temperature measurement). The Person in Charge (PIC) was alerted and moved the Time Temperature for Control (TCS) sushi to the bottom of the prep table at time of inspection.. The top of the prep table measured at 50.9°F with the min/max thermometer and the lower internal compartment measured at 40.8°F. Sushi chef to refrain from placing any TCS items in the top of the prep line cooling unit until it is repaired and can maintain temperatures below 41°F. Observed the top of the sushi prep table measuring at 50.9°F with the min/max thermometer and the lower internal compartment measuring at 40.8°F with the min/max thermometer. Sushi chef to refrain from placing any TCS items in the top of the prep line cooling unit until it is repaired and can maintain temperatures below 41°F. Discussed the importance of routinely checking equipment temperatures and maintaining equipment in good repair. Safeway placed a work order in on the prep table, at time of inspection. . A reinspection on the cold holding unit will be conducted within 10 days. A picture of the maintenance receipt along with a notation that the equipment was fixed can be sent electronically via email.
