Observed mechanical dishwasher testing at 0 ppm of chlorine at time of inspection. After multiple run cycles and tubing readjustiment we were able to bring the mechanical dishwasher testing at 50-100ppm.The dishwasher is to be checked each morning on the first cycle of dishes. Food-contact surfaces must be properly sanitized after washing and rinsing. Discussed the importance of proper sanitizer levels and proper monitoring of sanitizer levels. Staff to sanitize dishes through the three-compartment sink until the main dishwasher maintains chlorine sanitizer concentrations between 50-100 PPM.

Observed chopped lettuce (48°F), diced tomatoes (47°F), cheese (50°F), and hummus (44°F) cold holding above 41°F in one of the main prep tables on the cook line. The Person in Charge (PIC) stated they have been having trouble with this unit for the past few days and a third-party servicer has already come out to replace all the seals. Parts for this prep table are on order and the third-party servicer will be back to finish repairing the prep table soon. Time Temperature Control for Safety (TCS) foods had not been in the not-working prep table for over 4 hours. All TCS foods were placed on time control, at time of inspection. Foods placed on time control must be discarded after 4 hours and may not return to temperature control. Discussed temporary time control procedures with management. Corrective Action: Corrected at time of inspection.

Core-6-501.11, C: Repairing-Premises, Structures, Attachments, and Fixtures-Methods Observed a prep table in the back of the establishment by the handwashing sink, with a heavily rusted lower shelf. Cardboard had been used to protect items from the rust. Staff to removed the absorbable cardboard and clean the lower shelf with warm, soapy water to remove the rust. After rust has been successfully removed the lower shelf can be sealed with semi-gloss paint or another approved sealant. Do not use unapproved methods. Food to be removed from prep table when repairing. Establishment to clean and repair the prep table before the next routine inspection. Also observed a small amount of rust on the freezer door. Staff to clean the door with warm, soapy water to remove the rust. Discussed cleaning requirements with staff. Correct By: Correct Prior To Next Routine Inspection
