Upon arrival, the front wall was open. They are in the process of installing new windows, frames, and doors on the right side. A new roll-up security door had been installed. They closed the roll-up door upon request. Close the roll-up door when not working on the frames and glass, or hang plastic sheeting temporarily . No flies were present in the establishment. All raw animal proteins must be stored below ready-to-eat (RTE) foods and stored according to cooking temperature at all times to prevent cross contamination. PIC properly stored all raw animal proteins according to the final cooking temperature based on the cooking parameters in § 3-401.11 of the Food Code.
