Observed shredded cheese, green salsa, and baja sauce holding 48-53F on the prep table at the assembly line. PIC said they were just put into the unit (holding 37F). Confirmed all the unit temperatures the products came from were holding 41F or below. PIC replaced the items with ones holding 41F. Corrective Action: Corrected at time of inspection.

Inspection report emailed to Daniel M.This establishment is not participating in the award program at this time and had 0 Priority, 0 Priority Foundation violations on this inspection.This establishment/operation has demonstrated sufficient compliance to proceed with the issuance of the permit. To complete the permitting process, issuance of this permit, and begin operation, the applicant must first submit payment of the annual operating permit fee to the Department’s Administrative Services. Fees paid up to this inspection approval do not include the annual operating permit fee. PAYMENT with a credit/debit card can be made via phone at 602-506-6824, Option 2. Per MCEHC Chapter I, Regs 4 & 5, no person shall conduct an operation or operate an establishment for which a permit is required without holding the necessary and valid permit to do so. Payment with a credit/debit card can be made on-line via select Pay a Fee at esd.maricopa.gov. Core-5-205.15 (B), C: System Maintained in Good Repair; Maintained 1) Extend the steam table drain line so that it reaches the front of the steam table. 2) Provide an ASSE 1022 dual check valve backflow preventer upstream of the iced tea dispenser. 3) Provide the hot water handle for the pre-rinse sprayer in the dish pit. 4) Provide a rigid drain line for the soda equipment. Core-6-501.11, C: Repairing-Premises, Structures, Attachments, and Fixtures-Methods 1) Repair, replace or remove the non-working coolers. Observed two small single door reach in coolers that no longer work and a prep table that only holds at 58'F. Neither of these tables contained any food or drinks. All equipment must be in good working condition. 2) Provide high temperature colored silicone to the gaps of the hoods. 3) Replace any burnt out lights. Noted under the hood. 4) Repair the lever on the middle 3-compartment sink basin. Lever was missing at the time of inspection. 5) Wrap the condensate drain lines in the walk-in cooler.
