Per PIC, green beans were opened from cans about 1 hour prior to inspection. Discussed proper cooling and cooling methods with the PIC. All food items prepared from ambient room temperature ingredients must be cooled from 70-41'F within 4 hours using approved cooling methods (shallow/unstacked/uncovered pans in walk-in cooler or other approved means). Discussed pre-cooling canned foods in walk-in cooler as alternative. PIC ensured all items were uncovered to allow for proper cooling at the time of inspection. :
