Observed handwashing sink near hot case with extremely slow drain. Handwash basin was filled with dirty water. Discussed ensuring that all employees are to use the hand sink near walk-in cooler for handwashing until sink is repaired in order to prevent any overfill and conveyance of sewage into the food preparation area. Must repair all plumbing to a state of good repair prior to next routine inspection. Corrective Action: Correct prior to next routine inspection.

Observed far right deli slicer with accumulation of deli meat debris, after logs were checked on when slicer was last clean it was found staff was only documenting one cleaning per day during the closing shift. Upon asking staff on when slicer had actually been cleaned including manager no answer could be provided. Discussed frequency of disassembling and cleaning slicer every 4 hours. Observed General Tsaos chicken hot holding in the deli case at 120-128F. The wings were discarded by the Manager's request, as reheating the sauce would affect the quality. The wings had been cooked less than 2 hours prior. Also observed party wings holding 120-128F in the unit that had been cooked 1.5 hours prior. The wings were reheated to 165F. TCS food items must be hot holding at no less than 135F. **After discussion with the person in charge, it has been determined that the root cause of the violation was training staff a policy issue, which resulted in the violation Correct By: Corrected At Time Of Inspection
