#22 — Proper Cold Holding TemperaturesPriority3-501.16

Inspector's notes

Observed containers of milk and heavy cream on the counter holding at 51*F and 60*F respectively. Per person in charge, containers were removed from refrigeration an hour prior. Containers were not marked with time of removal and laminated Time as a Control log for daily use hanging on wall was marked "NOT IN USE". All milk and cream improperly cold held were relocated to alternative functioning refrigeration unit to rapidly cool to 41°F at time of inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Discussed cleaning food surfaces that come into contact with temperature control dependent food items to be washed rinsed and sanitized every 4 hours.
