Observed boxes of pinwheel-style sandwich fillings (deli meats and cheeses) and packages of low moisture mozzarella with internal temperatures of 52-56 degrees Fahrenheit in a reach-in cooler that was not holding cold during the inspection (52F ambient temperature with min-max thermometer). Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Person in charge (PIC) did not know when items were placed into the unit and voluntarily discarded the items. The unit is not critical to the establishment's cold-holding capacity. Corrective Action: Corrected at time of inspection.

Hand wash sinks must be accessible at all times to allow for proper hand washing. Addl Notes: Observed no soap at hand sink in the front prep area of the deli at time of inspection. PIC provided a roll of paper towels at time of inspection. Per PIC, they have been doing regular scheduled maintenance and the equipment was not placed back on the walls. Corrective Action: Corrected at time of inspection.
